Gil, the crystal marked 27.000 (the replacement crystal) is for the Si5351 synthesiser module.

The other crystal (marked 20.000) is installed on the main ultimate 3s board.

Roger provided a replacement crystal for the main PCB.  It is marked 27.000.  The one that came with the kit is marked 20.000.  

All through the assembly instructions, it refers to a 20.000 MHz crystal.  Which one should I use?
